Kueh Lapis Legit (2010藍色大門聚會自備食品)

有幸參加獨角仙的藍色大門聚會~
每一位參加者都要自備一道食品!
我選擇了做 Kueh Lapis Legit (印尼千層蛋糕)~
網路上察看並沒有太多有關的食譜,
根著其中一個食譜試做過可惜失敗了…
後來自己加加改改的又再做了兩次,
最後終於做到可以拿出來獻醜的程度~
這個其貌不揚的蛋糕工序其實非常繁複,
絕對是挑戰自己能力和耐力的舉動…

聚會後面仙姐要我們提交食品的食譜,
我就即管把我記憶中的材料分量公佈出來~
但大概沒有人會想做這麽繁複的蛋糕吧…
(食譜用英文寫, 因爲有些步驟中文不懂得如何表達…)





Kueh Lapis Legit (印尼千層蛋糕)



Ingredients:
(A)

250 gram unsalted butter
60 ml condensed milk
1/2 tsp vanilla essence
(B)
13 egg yolk (medium size)
100 caster sugar
(C)
100 gram plain flour
1/2 tsp mixed spice (喜歡五香味濃的可以自行加多一點分量)
(D)
4 egg white
1/4 cream of tartar

Steps:
(Step 1)

Cream (A) until smooth and well mixed.
Set aside.
(Step 2)
Beat (B) to light yellow colour and become creamy form.
(Step 3)
Add in butter paste (Step 1) into creamed egg yolk (Step 2) until well mixed.
(Step 4)
Sieved all dry ingredients (C) into the mixture.
Set aside.
(Step 5)
Beat (D) until thick and stiff.
(Step 6)
Carefully fold egg white (Step 5) into the mixture (Step 6) until well mixed.

Baking:
(i)

Grease and line your baking tray.
(ii)
Set your oven to “Grill” mode and preheat at 180 degree C.
(iii)
Pour a think layer of cake mixture into your baking tray.
Spread evenly and bake for about 12 mins or until golden brown.
(iv)
Take out your baking tray.
Slightly press down the cake layer and prike all over the layer.
(v)
Repeat (iii) and (iv) over and over again for each layer.
(vi)
When the top layer is done, cover the baking tray with foil paper.
Turn to “Bake” mode and return the cake into the oven for another 30 mins.
(vii)
Turn the cake out the baking tray and remove baking paper.
Let it sit on a rack and leave to cold.
(viii)
To serve, cut the cake to slides as you wish.

Remarks:
I was using a 5” x 6” baking tray for this cake.
For 8” x 8” baking tray, just double all the ingredients.
